Quick Berry Crumble

This month, we are celebrating the season of berries — strawberries, cherries, raspberries, and even their well known cousin, rhubarb. But since this recipe focuses on the hustle and bustle of life, when we just need a “pick up and go,” we will just be using berries. They are the easiest to yield to perfection, and you can use just one type or multiple types of berries — both ways are delish.

Tools: 

A small baking pan or an oven-safe glass bowl

Ingredients:

Berries of your choice, e.g., strawberries, cherries, raspberries

Granola clusters

1-2 tbsp of brown sugar; adjust depending on the sweetness of your berries

2 tsp of cornstarch

½ tsp of lemon juice

A small pinch of salt

Instructions:

In a small baking pan or, ideally, an oven-safe glass bowl, combine your berries and 1 tbsp of brown sugar. Let the mixture sit for 5-10 minutes so that the sugar can withdraw some of the moisture from the berries, thus creating a more jammy consistency. Once the mixture has set, mix in the cornstarch, salt, and lemon juice. Top your berry mixture with the granola clusters — you can make your own granola clusters but to keep this recipe quick, we will go with store-bought granola. Sprinkle 1 tbsp of brown sugar on top of the granola and bake in the oven for 5-10 minutes at 375 F or until the crumble is golden brown. Feel free to sprinkle more brown sugar on top for a sweet crunch and enjoy!
